Chef Peng General Tso Chicken

Ingredients

Chicken:

• ½ cup sugar

• 2 tablespoons fresh ginger (minced)
• ¼ teaspoon white pepper
• 2 tablespoons vegetable oil

Frying:

• 2 large eggs
• 1 cup all-purpose flour
• ¼ cup cornstarch
• Vegetable oil, for frying

Method

Step 1: Preparing the Chicken

In a medium bowl, combine the chicken cubes with garlic powder, Chinese rice wine, and cornstarch. Season with salt and pepper, mix well and let marinate for 20 minutes.

Step 2: Making the Sauce

Using a small bowl, mix all the sauce ingredients together and set aside.

Step 3: Frying the Chicken

In a shallow dish, beat together the eggs. In another shallow dish, combine the flour and cornstarch. Heat some oil in a deep skillet over medium heat. Dip the chicken pieces in the egg mixture, then coat them with the flour-cornstarch mixture. Fry the chicken in batches, stirring occasionally, until they are golden-brown and cooked through (about 5 minutes).

Step 4: Finishing the Dish

After removing the cooked chicken from the pan, pour in the prepared sauce and bring to a simmer. Add the chicken back in and toss to coat evenly. Cook for a few minutes more, stirring occasionally, until the sauce is thick and bubbly. Serve with steamed white rice.
